
Mission Statement
The
Department of Animal & Food Sciences at the University
of Kentucky carries out a wide variety of activities related
to improving and expanding animal production and animal-derived
food processing in Kentucky. We instruct undergraduate and
graduate students; provide distance-learning opportunities
for off-campus students and conduct adult education programs;
perform basic and applied research; and facilitate information
transfer via extension outreach.
Instruction
Instruction
is an essential component of the Department's mission. Courses
in the applied and basic aspects of animal nutrition, reproduction,
genetics, and management provide current information needed
by students. The Food Science Section offers basic training
in the study of the transformation of biological materials
into food products. All courses are designed to provide
students with a broad backround in all phases of animal
agriculture and prepare them for the demands of an ever-changing
career market.
Research
Through studies involving swine, sheep, poultry, horses,
dairy cattle, and beef cattle, the Animal & Food Sciences
Department is striving to help maintain and improve an affordable
and safe supply of food and fiber. While promoting efficiency
in production and processing of animal products, we look
for cost saving measures for producers and processors that
allow for the sustainability of agriculture. We focus our
research on efforts which explain biological mechanisms,
develop new technologies, apply technology, and sustain
an environment favorable to our ecosystem.
Extension
The transfer of information related to animal agriculture
between academics, industry, and the general public is the
responsibility of the Department's extension program. This
is accomplished via producer workshops, field days, farm
visits, pamphlets and fact sheets, and electronic software.
The extension program includes a youth component in which
young people are encouraged to participate in animal agriculture
activities.
