The Local Food Cost Calculator is designed to help chefs and food service managers analyze more precisely the cost difference between locally sourced farm products and those available from mainline distributors. The calculator converts the cost per case to a cost per plate for one or more items. Twenty-one commodity produce items and six proteins are included in the calculator. The calculator analyzes only the cost differential; it does not give value to "freshness" or "better taste" or production practices. From SCALE, Inc.
