The National Food Safety
Database
The National Food Safety Database (NFSD) has been produced to educate food
handlers about ways to prevent foodborne illness. This Database contains comprehensive food
safety information authored by numerous academic, government and private organizations, and
designed to be applicable across the United States. Resources were designed to be used by
educators, state and federal public health agencies, consumers, and food service and food
processing industries. The University of Florida in cooperation with the USDA.

HACCP Implementation Manual
As part of FSEP, Agriculture and Agri-Food Canada has prepared Guidelines and
Principles for the Development of Generic HACCP Models. They orient the reader to the
concepts of HACCP, identify the steps required to conduct a hazard analysis, identify critical
control points, and explain what is required to implement a HACCP system. The manual
contains four volumes: Volume One - General Policy; Volume Two - Development of
Generic HACCP Models; Volume Three - Application of Generic HACCP Models; Volume
Four - Food Safety Enhancement Program Operational Guidelines (Not yet available --
currently being developed.)

Digital Learning Center for
Microbial Ecology?
The Digital Learning Center for Microbial Ecology (DLC-ME) is a science education
project under development at Michigan State University. The DLC-ME is being developed by
the Comm Tech Lab in collaboration with the Center for Microbial Ecology and the College of
Education at Michigan State. The creation of the DLC-ME is being partially sponsored by the
National Science Foundation. The goal of the DLC-ME is to use computers and network
technologies to provide students and teachers interested in microbiology and microbial ecology
with resources that may aid their learning and teaching. Elements of the DLC-ME will
eventually be distributed in three ways: on line as a World-Wide Web (WWW) site, by
downloading (using ftp) software modules for use on personal computers, and as a CD-ROM
for use on personal computers.

Regulatory Fish
Encyclopedia
The Regulatory Fish Encyclopedia (RFE) is a compilation of data in several formats
that assists with the accurate identification of fish species. It was developed to help federal,
state, and local officials and purchasers of seafood identify species substitution and economic
deception in the marketplace. The RFE includes for each of a number of commercially
relevant fish species for sale in the U.S. market high-resolution photographs as their scanned
digital images (jpeg format) of whole fish and their marketed product forms (such as fillets)
which may be used for visual comparison to a whole fish in question (or its marketed product
form). The RFE also includes unique taxonomic characteristics (physical properties such as
size, shape, color, etc.), usually in a "checklist" format, to aid in identification. In addition
there is chemical taxonomic information consisting of species-characteristic biochemical
patterns which may be compared quantitatively to patterns obtained by an appropriate
laboratory analysis of the fish in question. These patterns include data from IEF (isoelectric
focusing) and RFLP (restriction fragment length polymorphism) studies
FoodNet (Canada).
