Snapshot of Small Grains in Kentucky

Small grains consist primarily of wheat in Kentucky. Other small grains grown in the state include rye, barley, oats, triticale and spelt. Soft red winter wheat (Triticum aestivum) grown in Kentucky provides flour for cookies, cakes, pastries, and crackers.


Hard red winter wheat is grown in the Great Plains and used for breads. Durum wheat is grown in the Northern Great Plains and used for pasta. White wheat is commonly grown in the Pacific Northwest and mostly exported to Asia.
