Herbed Corn

Ingredients

12 cups frozen corn
1 cup water
1/2 cup butter, cubed
2 tablespoons minced fresh parsley
2 teaspoons salt
1 teaspoon dill weed
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon dried thyme

Directions
In a large saucepan, combine corn and water. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until corn is tender. Drain; stir in the remaining ingredients. Yield: 10-12 servings.

1 serving (3/4 cup) equals 212 calories, 9 g fat (5 g saturated fat), 20 mg cholesterol, 476 mg sodium, 34 g carbohydrate, 4 g fiber, 5 g protein.

Vegetarian Zucchini "Crab" Cakes

Ingredients

2 1/2 cups grated zucchini
1 egg, beaten
2 tablespoons butter, melted
1 cup bread crumbs
2 1/2 cups grated zucchini
2 tablespoons butter, melted

1 cup bread crumbs
1/4 cup minced onion
1 teaspoon Old Bay Seasoning
1/4 cup all-purpose flour
1/2 cup vegetable oil for frying

Directions
In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well. Shape mixture into patties. Dredge in flour. In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.
