New Starbucks Opens at Kentucky Clinic

LEXINGTON, Ky. (Sept. 7, 2004) -- University of Kentucky’s Kentucky Clinic held its grand opening and ribbon cutting of the newest Starbucks location today.

In November 2001, the first self-operated dining service in the country to operate a licensed Starbucks store was opened by UK. The newest Starbucks is the third licensed location on UK’s campus and employs a staff of as many as 60 people. With one exception, every employee at the new Starbucks is a student.

“UK wanted to help keep the Kentucky Clinic the thriving place it is by providing a warm, comfortable place to relax and enjoy a break for students, faculty and staff,” said UK President Lee T. Todd Jr. “We also wanted to provide that same comfort to those who visit our clinics and hospitals. Incorporating Starbucks has helped us achieve that.”

"We are thrilled to be adding our third Starbucks on the UK campus,” said Patricia S. Terrell, UK vice president for Student Affairs. “Thanks to President Todd's vision, UK will open our fourth Starbucks at the new Biological/Biomedical Sciences Research Building in January 2005."

The three campus locations have expanded the menu to include sandwiches. The sandwiches consist of roast beef with blue cheese and roasted red pepper on focaccia bread, turkey with sundried tomato and pesto on focaccia bread, and a mélange of roasted vegetables and feta dressing on focaccia bread. The expanded menu also will include fruit salad, Greek salad and country chicken salad.

“We look forward to working with the University of Kentucky to serve the students, faculty and campus community,” said Scott Glassman, regional licensed sales manager, Starbucks Coffee Company.

Samples of coffee, pastries and sandwiches were available at the ceremony. Patrons also registered for door prizes including tumblers, mugs and coffee.
